I've heard someone claim Hunter 2 Pyron had better fireballs than Savior 2 Pyron, but it's BS as far as I can tell. Donovan and Huitzil have some small differences between Hunter 2 and Savior 2, but both versions can be selected in either game (hold start when selecting to get the other game's version).

Virtually, there isn't.
Only "downside" some people point out is that the screen isn't exactly the same reslution as the arcade. So the stages are a tad bit narrower than on the original. However, you can choose "arcade mode" on the menu to give stages some extra space to be arcade accurate, but the character goes a bit off screen on the corners.
The sound is also not the same, it's still high quality but the instrumentation sounds a bit different than the arcade. I can't decide which one I like more. Both sound good.
Other than those, it's pretty much arcade-accurate in terms of graphics, gameplay, and has the additional Hunter characters. Also, unlike the other versions of VS, Saturn is the only one that requires you to beat Oboro Bishamon in order to select him. In the other ports you just select him right away.

They're somehow both worse than vsav, which is quite an accomplishment given that vsav is meme garbage with RNG pushblocking and disgusting mixup-centered gameplay. Only reason people dickride these games is because they're trash at fighters and can't see that vsav is trash with absolutely no neutral game that isn't retard mashing and holding up-forward.

Only reason to play vsav or the rereleases is if you are:
