I was surprised to learn of the high regard lots of /nintendo/ has for yoshi's island. As a teen i played it (loving SMW) and yoshis island was a huge let-down. All the yoshi games since have been for an audience <8 years old IMO, an adult shouldn't enjoy something so trivial.

I didn't like it either. I don't even acknowledge it as a good game. I don't know what people like about it. Compared to SMB3 or SMW it's just a weird and completely underwhelming game with odd graphics, weird atmosphere and unsatisfying controls. I imagine the people who hold this game in the highest regard as being toddlercons with a diaper fetish. It's the only explanation that makes sense to me as to why they would so violently and aggressively defend this game. People usually get really upset when you state that you don't like Yoshi's Island.

I've just got the original cart for my collection, beat it and it was very meh, doesn't even touch SMW.
Don't know why some people consider it better, the hardware effects are cool but the level design and just general gameplay wasn't great.

Is the Island the sole property of just the titular Yoshi, with every other color Yoshi's subjugated under his dragocian yoke of colonial oppression?
Are the non-green Yoshi's ranked differently based on their complexion? Is there a correlation between the levels and the Yoshi that goes through it? Are Yoshis of certain color forced to always do the shitties jobs like slogging through the sewers and monkey-infested swaps?

Then years later I look around at gaming forums and everyone is circlejerking Yoshi's Island like it's one of the greatest games of all time. That's the part I don't get. The second or third boss honestly. The game is just insanely hard, you have to switch weapons and manage ammo while dodging and firing and it's hard to hit that first boss the way he moves

I've never beaten Alien Soldier, but it's not actually that insanely difficult once you understand how the game works. Especially since you get infinite continues. The key is to make sure you start each boss fight with full health, because that lets you do the Down+C shinespark-style move which will significantly reduce the healthy of any boss right off the bat. From there it's just a matter of timing dodges, usually going from one side of the boss to the other.

Also the homing flames are the best weapon. Pick 4 of those and never anything else.

Approach it more like a Castlevania game and not a happy-go-lucky platformer and you'll be fine.
Try to get the upgraded weapon (you upgrade your weapon by getting the elephant statues enemies drop, you can upgrade 2 times). It will give you a far better range and deals more damage. You lose the upgrade if you get hit.
The real hard stuff starts at world 3.

You posted the prime example for me. I grew up with the nes, and the SMB games were always some of my favorites. I got a genesis when 4th gen rolled around, but still got to play SMW and a bunch of snes games at my friends' houses. SMW2 was probably the the game I always wanted to play most for that system but not was able to growing up. Fast forward over a decade later and I finally get a snes and a handful of games. I remember being so excited to finally play it, and then disappointed soon after. I really wanted to like it but just couldn't. It felt too much like a chore than an actual Mario game. I guess it's because platforming took a backseat to collecting. I don't even think I got halfway through before moving on to something else.

I don't mind a challenge but a lot of those games are just a bit higher than my threshold. I like the core concept and gameplay of NES Castlevania, and Megaman, otherwise I wouldn't like Castlevania 1 or Megaman 2. ( I have beaten Megaman 1-8 for the record )

Castlevania 3 is fine up until I encounter a boss. Then it kind of stops being fun. I could probably pass it if I save scum but I'd rather not need to do that to enjoy a game.

The Final Fantasy and Dragon Quest series because I'm an idiot who has no patience for anything other than pushing right and jumping on platforms. I really want to enjoy RPGs but I can't seem to get into the right mindset of taking things slow and soaking in the game.
