Try one of the many fighting games, racing games and shmups for the system. There are even a ton of puzzle games for PSX. Just because there's famous RPGs and metal gear doesn't make the PSX the cutscenes system. If you want personal recommendations, I like Ridge Racer Type 4, R-Type Delta, Zanac Neo, Bushido Blade, Street Fighter Alpha 3 and the Wipeout series.

You're better off playing it in any other system, especially Saturn.
There's some nice PS1-exclusive fighters that aren't arcade ports though, like Gundam Battle Assault.

If you can't adapt a game with very slight or none modifications so it can be a profitable cabinet, then it's not arcade style.
Thunder Force III is an arcade style made for console game, the only thing it needed for it to get adapted to the arcade is a harder difficulty within the same game (it also has a couple of different stages so it isn't the same thing, but the entire gameplay is the same)
MGS absolutely cannot fit this criteria. It's a cinematic experience, just that in the 90's those were still a bit more gamey
