Mesen has surpassed Nestopia for NES (it's more accurate overall, it has better audio, more mapper support so Konami translations actually work now, better options etc.
And there's good ol snes9x for SNES. Use the Retroarch cores for both.
There is no need to use BSNES/Higan, it's just a waste of CPU resources you can be using for other emulation features like latency reduction.

Considering Retroarch's config system is shit, yes. I can't say there's anything terribly difficult about the nestopia or snes9x config windows. And even if you do want to waste your time reading over Retroarch's config documentation, the frontend is so broken that it might corrupt or disregard your settings anyway.

No. Retroarch has a default button map for every core. You can tweak it for individual cores if you like, but you don't have to.

I tried going retroarchtistic on my Wii U, hoping it would dilute my buyer's remorse, but found out the shaders don't work, and there's no dynarec for psx/n64. What really steams me is that people have compiled shaders that work on Wii U, but are keeping it for themselves.
