Can anyone explain that? Stereo broadcast TV was a thing in the 80s. Why was stereo just fine going 30 miles through the air but not 9 feet through a cable? It was too late for the Famicom/NES but what was stopping the SNES or Genesis from outputting stereo over RF?

Nobody claimed this. Numerous sources claim Nintendo took inspiration from the Colecovision for the Famicom.

Nobody claimed this.

There's no reason Nintendo should have made the Famicom exactly like any other system they were aware of. The claim in question here is whether the Famicom was an early console (it was) released in a time with not much precedent relative to today (also true) and whether decisions made about it would have been made without the hindsight we have now (true).

The fact that Nintendo took their home market into consideration when making decisions about the Famicom is not an error or a mistake. They made a system that made sense for the time and place.
