Yeah but it's still exclusive to the Saturn version. Also it's not only the new areas, it also has a few extra music tracks, a few extra items, and one extra equip button.
But still, yeah, I think the PSP version is the definitive version of SOTN, since it has more content than the PS original, and doesn't have performance problems like the Saturn version.

She learned martial arts, which I think makes her more interesting than her keeping the same moves from her childhood, as if she actually grew up. In this version, she retains her animal tossing ways of her loli past.

I actually prefer Maria's classic Rondo moveset. Seeing all those animals re-worked in SOTN-style spritework was great.

It didn't suck, it just isn't the same as the original, and I do prefer 2D sprites over 3D, but the backgrounds on the remake have a lot more detail than the original game (which is often composed of black background, generic brick walls, etc).
Best thing about the remake is Dracula's new final form (which is actually a bit challenging), and the boss rush mode. Also, stage 5B is much better designed (not only visually, but overall, the layout and structure of the level is more thought out).
Also has a couple new bosses.

The later is the new ending piece that Michiru Yamane composed for the PSP version since I guess they couldn't use IATW due to copyright or something.
IMO it's better, it fits the mood of SOTN better than IATW which is an R&B song, which I guess was popular at the time, reminds me of The End of Evangelion's "Thanatos". Ideally I would have liked to have both songs on the PSP, but Mournful is a really good ending theme.

Both are interesting though, but again, SOTN isn't a game balanced toward those characters. It's just nice to have them as little extras, but that's it. It's not really all that much fun to play through the game with them.

Maybe, I'd have to check both back to back, but Maria's normal walking speed seems faster on PSP. Anyway I like the dashing and how you can dash mid-air, not saying Saturn Maria is bad, I just think PSP doesn't suck as you say.

Saturn version is best. The extra content is really fun, especially the double tap running which singlehandlely makes the reverse castle twice as fun; but also the new weapons and their special moves.

it feels like sotn saturn haters haven't actually played it.
like yeah the jail area sucks but the one under the starting point is nice.
the best saturn exclusive is the ability to run as a powerup so you're not backdashing forever.

also keep in mind all that the psp version did was add a new maria, add in the missing familiars (they were always jap only), and change the english voice acting/script.
the biggest psp change is it gets the new ability to crash at random.
the ps3/360 ports are also prone to crashing.

But all 6 GBA and DS ones have more solid gameplay. They're all more balanced, although CoM and HoD can easily be broken (the cross is OP as fuck in both, you can rape the entire 2 games with it without breaking a sweat).

I've been replaying all 6 handled ones lately, I used to think they all have their pros&cons but now I tend to think AoS and DoS are the bests, the most balanced, especially when played on Hard. On Hard the game is well balanced and drops (items and souls) are more likely so there is less boring grinding.

Vampire Killer on MSX and Akumajou Dracula on the Sharp X68000 could also be considered to have a 1930s monster movie vibe too, sure. Also Haunted Castle.
But Rondo, Bloodlines, and especially SOTN is when it went for a more different approach, more inspired by anime aesthetics.
Not that that's a bad thing though, I just don't think SOTN has a classic monster movie feel, as CV1 does (or Vampire Killer on MSX; if you're going to be anal about nintendo again)

I got a Hide Cuirass drop from a Stone Rose enemies, which according to FAQ isn't supposed to have one.... I don't recall Luck mode changing the drops, so does the PSP version have different drops?
