Screen shots on box art back then were actually photographed off CRT screens. They likely adjusted contrast to make them look more appealing.

Also, practically nobody actually adjusted the contrast on their TV's in the 80s. So it probably actually appeared more blue on most people's TV's.

The nes's color palette changes depending on the television it was plugged in to. It was all based on whatever decoder the tv is was plugged in to is using. There is no "real color", because the color miyamoto picked was probably slightly different than the one that showed up on your television unless you and him happened to own a display with the same decoder.
