Anyway, I dunno. CV64 has definitely some issues but so does SOTN.
In terms of actual game DESIGN, Castlevania on N64 feels closer to the classics than SOTN, despite being on 3D, you're still struggling to survive on a fiendish castle full of platforming traps and enemies that actually pose a challenge.
SOTN feels like a completely different series, and the only traces it has with Castlevania is the beautiful 2D graphics and playing as Richter for 5 minutes at the beginning.

I’ll put my shit opinion in before the janitor gets this thread. I used to say I liked both but SotN was better. Now I honestly and unironically think the N64 entries are better. SotN is a ~8 hour Super Metroid clone with half assed RPG elements that do nothing but prevent you from plowing through the game even quicker. I say 8 hour because only 8 hours of it are good. The inverted castle is a fucking slog. Alucard’s sprite isn’t that good either and people who say it’s one of the best sprites ever made are just spouting shit meme opinions. Fuck Koji Igarashi for making variations of the same shit game for 10 years and turning the series into nothing.

Which is more of what can be said of SOTN, since whipping isn't even there (Richter mode is a nice bonus but that ultimately makes you realize how this game was built around Alucard and not the classicvania style).
It's true that CV64 changed a lot of things (and some weren't even bad, mixing action-adventure with Resident Evil style (except with an actual camera and not tank controls). The camera is often criticized but it's not really that bad considering its contemporary games. You could still adjust the camera behind you pressing R or whatever.
But despite having new elements, it still has classicvania style levels, where you'll be jumping through guillotines and familiar classic CV enemies.
I think both SOTN and CV64 are way too different to the originals, but of the two, 64 is the one that retained the classic design philosophy the most (even if mashing it with other kind of styles). SOTN gives the illusion of being a CV game, but then you realize: there's no way of dying because of falling in some botomless pit. Because of that, design is pretty much built around the enemies and often are empty corridors. The same can be said about 64's Villa level and the other more adventure-like levels, but then there's Tower of Sorcery which is pure hard action-platforming.
Also I thought it was common knowledge that CV 64 is a 3D successor to Rondo of Blood. Choose between a whip-wielding vampire killer or a magical loli that spams animals/magic balls. The theme itself at the title screen is the classic stage 1 rondo bgm in a violin arrangement, so I guess it's kinda obvious.
I'd still say SOTN is the better game, but 64 is definitely closer to the classic CV ethos than it.
