They're the definite RPG series.
From 4 onward you got a growing immersive world and plots that went beyond killing the evil wizard.
Grinding is hardly the main part after 3, you may need to invest some time to raise your level but you'll spend a lot more time conversing and exploring.

Ultima 9 is underappreciated. Some people treat it like the worst thing ever when the main problem is the plot.
Without regard to performance the engine is impressive, the developers didn't really understand how to use it and needlessly restricted access to smaller areas instead of letting you roam free.

Which games did you play? That's barely a thing in Ultima, especially in the later games.

Play the games listed below. If these don't change your mind then Ultima might just not be for you.

The series is responsible for creating, defining, and expanding the computer RPG. If you didn't play them when they were new, it's difficult to play them now. All you really need to know is that from 1-7, they were literally the most advanced computer RPGs from a technical and story standpoint at their times of release.

It's the grandfather of all RPGs. Without Ultimas, you won't have any dragon quests or final fantasias. You won't have Everquest either.

DQ1 is hardly anything like Wizardry even without considering the dungeons and fairly similar to the early Ultima games.
Black Onyx or Megami Tensei would be better candidates.

They were hugely influential. Ultima III (and Wizardry I) inspired the entire family tree of japanese RPGs.
