When games are simple it all boils down entirely to gameplay with maybe a tiny bit of audiophile appeal. If a game really nailed down an appealing gameplay mechanic of course it's going to be "cloned" but there are gamers who might prefer the complete simplicity of the bare bones. To that type of gamer who wants to just pop in a cart, flip a switch and immediately start a skill challenge, with a very wide available library the 2600 might be a great choice.

Millennial here('87). The 2600 was my first home console(grew up poor). I have fond memories of it playing asteriods, pac-man, frogger, qbert, etc. When I go back now tho.... it's rough. I can usually last an half hour then I turn it off. It's neat to play every so often for a half hour or so but that's about it.

You can build your own arcade stick for 2600 if you want, it has no discrete logic and is just simple pole-to-ground but the Epyx 500xj might be what you're looking for. It's ergonomically designed for right-hand-on-stick though, that's a hurdle for many people.

At least in my country the 2nd gen systems weren't really a thing so I have never even seen a Atari 2600, Intellivision or Colecovision IRL to this day. Out of curiosity I just checked if my local ebay like sites even have these things for sale and no, there weren't any consoles only a handful of games for them.

I however want to buy a 2nd gen system someday even if it makes me a "millennial hipster". If I were to buy one is 2600 the way to go or has the console of the future something in it's sleeve that 2600 doesn't have?

Also which systems have flash carts available for them?

Many of the best titles on the 2600 were arcade ports that have been on any number of systems since then. If you want to emulate something like Asteroids you have no lack of options.

Look up harmony cart. It's for the 2600. They made one for the 7800 but it's hard to find and not produced anymore. I think 7800 will play 2600 games, but honestly 2600 is the way to go. I grew up on a 4 switch woodgrain, but I kind of have a soft spot for atari jr. If you don't already, I would suggest you learn to solder (even on scrap electronics). Reason being, when buying used they often need small (and really beginner level stuff) fixes, like the socket on the board where the power plug goes into. Just little things, but shit, for 40 year old consoles, they are doing pretty fucking great.

By default they are rf only, but again, work on your soldering, a composite (or even svideo, rgb) signal is really easy to get. You can make your own or buy a board to do so for like $10.

I'm a millennial who had a Vic20 and an Atari 2600.

They were honestly not very good and my NES that I got a few years later was much better. The NES had shitty arcade ports, but it had flagship games that not only offered something new but were exclusive to the system. The other systems were the shitty ports.

Don't get me wrong, some of the most fun I had as a kid was arcade ports, like Joust and Double Dragon 2. It wasn't the reason to play games on console.

Computers games back then used the same memory for graphics and sound, so a smart Developer could have moments of really good audio as long as they limited what was going on onscreen.

I have a XEGS and i love it, but to be fair for 1987 it was obsolete compared to the NES. And all the really good games were on tapes or diskettes, which make it very painful to use. But its a great system that allows you to play most of the 2600/5200 catalog because 90% of the games were ported to this system. And it has composite output so the image comes crystal clear.

They can't get past the graphical limitations on their own. I've introduced a number to the system and after they actually PLAY it, I haven't found one that dislikes it. That and most seem to be among the Nintendo Revisionist History group that thinks nothing of worth happened prior to NES, in spite of the entire industry being founded around it.
