Really what it is, is when powering off the system sends random electrical pulses to the cart that can corrupt the save data. Holding down reset somehow prevents that in the earlier models. Later revisions fixed the problem. The original console just wasn't designed with saving games in mind

Good question. As far as I know the Nintendo reset switch is a power interrupt, but I don't know how that would spare the hardware on the cartridge. Unless it's voodoo, I'm thinking the soft reset allows some power to remain on the NES as opposed to an outright shutoff, and that amount of power allows for less shock to the cartridge? All conjecture as I don't have any documentation.

It holds the 6502 processor in a halt state so it can't do anything while the power stored in capacitors dries up. The 6502 CPU has no predictable defined behavior in a low power situation so it kind of randomly starts interpreting and sending commands that aren't there. In a fully ROM system this is of no consequence. Once SRAM saving was added, suddenly it's a problem if the processor decides to write some random bits while singing Daisy.
