honestly am I the only one nostalgic for the World Warrior international fighting tournament theme of the old Street fighter 2 series and sick of the psycho power anime school girl funko Japanese pop music Bullshit of today's street fighter 4 and 5?

I miss the blatantly stereotypical characters of of the old SFII whose music, stage and looks and even win quotes where all based on nationality.

It's all down to the way the market works. In the old days you could have lots of different IPs, each with their own theme. Street Fighter had the national martial artists, Darkstalkers had the cartoony movie monsters, Cyberbots had the mecha, Rival Schools had the Japanese school tropes, etc. But as budgets grew and the management became more and more business-oriented, they quit that. They culled all the IPs aside from the one that sells the most. But at the same time, they can't let that one IP get stale, and they feel they have to make it appeal to literally everyone, so they shove all sorts of disparate themes into it to the point where it lacks identity.

It was more due to player behavior. Fighters aren't like platformers or action games where you play through them a few times and move on. Most find what one or a series they really like and then stick with it until they master it.

Combine that with the multiplayer focus to the genre and many people will gravitate towards what's popular so there is a lot of people to play with. So with fighting games they tend to either be very popular or flops. So going forward they just had to stick with what would make them money.

Alright, here's my take on it.
SF1 was actually more or less about "street fighting" as you said. Tuff enuff streetwise guys, punks, etc. Kinda like Double Dragon atmosphere-wise.
Here's a point of particular interest: Fatal Fury 1 was directed by some guy who left Capcom after working on SF1. And lo and behold… You actually do fight in the street in it, as well as in a cafe, on the beach, etc. There's a whole Southtown setting for this. Terry Bogard looks more like your street fighting fella too.
Next is… Final Fight. The game's working title was Street Fighter '89, but eventually they changed the genre and the name. Despite that, you can see the game shares some semblance with SF1. Same street setting, but different heroes.
Now, the big change came when SF2 was released. It was all in its title: World Warrior. This theme of international fighting tournament can be seen in Bloodsport for example; but heck, Punch-Out did something very similar. Actually, I'm reading that initially the game was supposed to be set on an isolated island hosting the tournament—think Enter the Dragon. I any case, they mostly abandoned their "street" roots in it.
Next up is SF Alpha. It took place between SF1 and 2, and as such, it had a lot of characters from SF1 return, but with some changes, for example Birdie, Eagle and Gen; also, Cody was supposed to be Joe, initially. Of course, they also added Final Fight characters. And the new ones added parody (Dan) and animu (Sakura), so at this point, I'd consider this more of a mashup/everything goes game more than anything.
SFIII was initially set to have a new generation of fighters. And that'd be great, but they also added mutant-like characters Akiman made for a completely unrelated game. They also decided against leaving Ryu/Ken out, so last minute they edited Sean's sprite to get both into the game. Subsequently, they screwed the vision even further, adding Chun-Li, Akuma, and other old characters.

As for IV and V, frankly, IV barely has any. It's an obvious mashup/throwback to the old games, a "best of" compilation of its most successful moments. As such, it doesn't give much concern about the continuity/atmosphere; the only general direction is the cartoony feel and oversaturated colors. As for the new characters, most if not all agree that they sucked.
V is similar, but at least it has more muted color palette, more realistic look, and more interesting characters from III and Alpha 3. But again, new characters suck in it, and barely help the little direction/atmosphere there was.

I fucking LOVE South Town. I think it's what really helped elevate the SNK games for me. Between Fatal Fury and Art of Fighting they actually created a real world for their characters to live in. All the places and stages you fighting have a real tangible connection to the characters. It gives you a real sense of what they could be doing and where they are when they're not fighting as well as giving you a real reason to want to see Geese thrown off a building and stop his criminal empire. It's admittedly very shallow 80s movie stuff but it's a nice extra bit of characterization that really fleshes out the games.

Street Fighter certainly has some nice stages but their all too token. You go to some air field in who knows what state, you go to some Japanese temple, some Russian construction site or a Chinese street but they're too disconnected from anything. They don't really flesh out the setting beyond what we already know of their real world counterpoints. Where in India is Dhalism's stage, Japan has a lot of bath houses. It's just a back ground.

Honestly I really wish more developers would take some extra care to establish proper stages for their fighters. A fighting game character needs to give away a lot of information about who they are as a person visually and having a proper setting can boost that a hundred fold.
I really wish SNK would do more with the South Town setting because even KOF doesn't really do it as well as the South Town games stage wise.

To Capcom's credit Rival Schools had a pretty good setting, you got a sense of where the schools are their relation ships and even their rivalries all via the setting. You got drive in theaters and amusement parks and places the fighters may go and Justice High has a lot of weight as a location just by how it connects to the other schools.

So yeah fighting game devs need to learn to maybe scale back and create stages that create a world.

Take a look at the cast of Agressors of Dark Combat. With the exception of that ninja from World Heroes as a guest, it features the sort of fighters you'd actually see picking fights on the street, including a schoolgirl. Welcome to video gaming. First, yes, your favorite games were made in Japan with Japanese audience first in mind. Imagine that. They just moved on to what was popular at the time. In America, it was grunge, satanism, rave, '70s nostalgia and such. In Japan, it was their anime, manga, j-rock and eurobeat. So, what a surprise, SFA has a girl in a skirt. Japanese should have totally banned that, but not Sailor Moon, Urusei Yatsura and all the PC-98 eroge.
Second, in case you haven't noticed, Street Fighter has long left its "street" roots, and left them to Final Fight. It's pretty much only in the name. If anything, it should've been renamed "World Warrior".
Yes, it's silly and makes no sense… So what? Let me remind you for a second that it's a game where guys throw fireballs at each other, and do a ton of other ridiculous bullshit. SF2 was envisioned as a game of crazy new ideas and characters, in case you didn't know that. You want realism? Play UFC games or whatever. You want gritty street fights? Def Jam or beat 'em ups. You want burly men grappling? Take Saturday Night Slam Masters, all the WWF games, etc.
Street Fighter is not street and it's not real fighting. And it hasn't been for over 25 years. Guess what, people still play every game in the series. Maybe because they liked the game as it was.
