The physics don't necessarily need to be stupidly simple, they just need to drive like what the player might expect expect a car would drive as Yu Suzuki once said. This can be applied to both Daytona and GRID. The driving needs to be exciting as fuck, as with the presentation because the driving model and presentation both directly fuel the player's excitement. This is what sets itself apart from games that aim to simulate cars, nothing to do with having licensed cars, earning money, buying upgrades, having power ups, damage modeling, etc.

This. There was this one in the late 80s early 90s in which there was a small sonic hanging to the rearview mirror, god it was so fun (top graphics in my memory)

A good arcade racer for me is one that forces you to learn the game like you are learning to play racing games for the first time. It should have different handling and physics from it's competitors with tracks to accommodate that force you to learn the ins and outs of the game to succeed.
I like modern day sims to, but if you get good at one you get good at them all. Learning to play R4, Rollcage Stage 2, F-zero X, WipEout 2097, Jet Moto, all with their different track designs and handling differences, to me is a way better experience.
