Smash 64 has the best scoring-system in solo play, Melee has also a ton of great scoring bonuses as well, but I thought Smash 64 was even better.
The only extra incentive Melee has is that it has unlockables (trophies).

Yeah but the scoring system is only for solo play, although now that I think about it, I can't remember if VS mode had score bonus displayed when the match ended, I think it did actually. But VS play is stock or time, so scoring doesn't really matter there, it's mostly for solo mode.

Advanced simulators aren't really "games" but if you're including them then you've answered your own question. As far as conventional fighting games go Street Fighter 2 is just as refined and nuanced as Smash.
