Why were western platforming series unable to evolve? We never saw any cool transition like SMB > SMB3 or SMB3 > SMW, they just remade the first game all over again.

With Mario games you don't really get a "evolution": you get a honest-to-God different thing that just happens to be good (often better). That is, they carry the basic principles, but they change enough so there's a fair bet that some of the elements you loved about a previous installment will be gone entirely in newer ones. It's a laudable gamble and a more than valid strategy, but it doesn't mean that polishing a formula keeping the core framework intact but trying new stuff mostly in terms of flow and level design is a "bad" alternative by itself.

I felt like the collecting wasn't necessary, and the stages and enemies felt more varied. Music is pretty good on both entries, but then you have the ghost pirate chase, the forest, stickerbrush symphony.

Not retro, but Ratchet and Clank had three consecutive games that were very different and a natural evolution upon the previous installment. Each of the three initial games are worth playing without any of them being inherently "better" than the others. It's pretty much exactly what you're looking for.

Then you didn't pay much attention to the games cause nowadays, fans are more impressed by the music (especially the first two games) and actually find the gameplay of the last two pretty good for a sidescroller. Some complain about the levels being "gimmicky" but then again, you could say the same about almost every sidescroller game from the SNES and Megadrive era (looking at you Sonic, Plok and Yoshi's Island).

Over the years I've come to accept that people with a weird alternate taste and a bad case of nostalgia might prefer DKC. I used to think Diddy was hard mode when I was 7. But in fact, pro players prefer Diddy, he runs much faster and can do cartwheel jumps to clear long gaps, and is overall much more tighter and accurate. As an adult I play only with Diddy
