Neo-Geo has some of the best fighting games ever.

But that's the vast majority of the library.

The Neo-Geo is severely lacking in non-fighting games. It also doesn't have any "home" games or games that have a continuity.

It's very one note. Not that that's a very bad thing, it just lacks a lot of games in different genres

There's 2 possible ways:
1) He ported Doom for the processor that printer had
or
2) He has a more powerful computer running Doom and the printer is just acting as a screen and controller.

I think 2 is more likely, but given the small screen size 1 may be possible.
