Try giving the Darius series a shot! Along with the R-Types they are my favorite STG games to play, and to make the branching level layout more appealing, their difficulty is a fair degree lower than other STG's of their time. Very good visuals too, despite the higher than usual level count, and the Zuntata music is just dazzling.

They are kind of different, honestly. US Dynamite Headdy feels like the difficulty was trumped up in uninteresting ways, leading to some of the boss fights being slogs, while US Hard Corps feels like the proper version of the game, with the JP life bars feeling bolted on (supported by the US version having come out first).
