what retro games have a solid playability like tetris and a certain depth to them; like in tetris you can improve your skills over a long period of time and there's always room for improvement

Various other puzzle games, Panel De Pon and it's variants is another great one.

Fighters, there are still people working on getting better at KoF and Street Fighter 2. Because they're player vs player there's always room for improvement.

Rougelikes are one of the most complicated and strategically deep genres there is.
