About gittin' gud.
Do you think playing different games across the same genre improves your overall skills or are gaming skills largely untransferrable?
As in, do you think if I only played gradius my skills would improve in other shmups too?

Skills acquired from playing games are transferable to varying degrees, even if they're different genres, as long as some mechanics are similar.

SHMPs are actually a pretty good example.
Success in a shoot-em-up depends on three factors:
Your ability to dodge/shoot/maneuver/etc. "Technique".
Your ability to actually DO the above correctly under pressure. "Confidence".
Your knowledge of what to do when to deal with what's coming. "Memorization".

The first two carry over from game to game but memorization, obviously, doesn't carry over.

It's true, when I get really far in a good run in a shmup I start shaking and panicking so bad I fuck up everything that I've practiced.

I have this a lot too, but after getting to the same portion over a dozen times. The "fear" starts disappearing. Even if it's really far into a run.

I'd definitely help, however you'd better pick something other than Metal Fighter, that game is garbage.

In shoot em ups? Definitely. They're all more or less the same so many of the techniques you learn in one game will be applicable to others. I mostly play vertical scrollers and it gets easier to keep track of bullets with my peripheral vision the more I play, and games with fast-moving bullets make everything else feel slow and simple in comparison. Obviously you're not going to be good at Gimmick if you're good at Mario, though.

I find abilities carry over and even cross genres but I also think it largely depends on the skill required for, and the responsiveness of, the game you're playing. If you're playing a shitton of a game with poor controls or an incredibly easy game, you're probably not going to get any better at another game because the skills you gain might not be that adaptable. On the other hand, play enough of a challenging game with great controls and your increased reflexes and coordination should carry over to many other games.

Playing online FPS is definitely transferable in my experience.
Platformers also, after some time the ones on NES that seemed impossible become reasonable.
