Don't beat yourself up over it, mang. Considering that you managed to get through absolutely everything else in the game without it, I'd honestly say that, if anything, you're far more persistent then this bloke of an OP.

Considering low-level runs are possible, I really don't see why it would be too amazingly hard to beat Zeromus by the time you're level 50. Zeromus is a strictly scripted boss, and predictability is what makes scripted bosses so easy.

Not as bad as Cloud of Darkness or Necron. At least they name-dropped Zemus on the first trip to the moon. The others appeared literally at the end. Hell, Necron popped up right when you fight him.

Not really designed for it, just lots of loose ends from the non-easy type version. You were able to unstone the twins in the Japanese version, for example, which is why the menu pops up.

The DS's was just kinda wonky. You had new game+, but only could go through the game a limited number of times. The augmentations were a neat feature, but to get the best use you needed to put them on specific characters. The GBA had a huge dungeon and multiple bosses, while I believe the DS only had two new bosses (though more original and harder than anything in the GBA extras)
The DS remake just had some weird design decisions where as the GBA was just an extended build up of the original. I guess it's neat how different each port of FFIV is.

yeah, a text pops up that they've stoned themselves out of their own will which is why nothing could ever work. Although gameplay wise you can perfectly petrify and unpetrify yourself.
