I've literally never seen or heard of Dobrekatops out of the context of the game series, so no, it is not the most iconic boss fight ever and I don't know how you could even think it is when stuff like SMB Bowser, Mother Brain, Mike Tyson, Zeromus or Safer Sephiroth etc exists. In fact I would think that the "helpless brain-like Gradius final boss" is a far more iconic trope than Dobrekatops.

I've never seen or heard of Mother Brain, Zeromus or Safer Sephiroth outside the context of their series either so I don't know why you're criticizing OP's choice. Dobkeratops is pretty much the face of R-Type considering how frequently it's on the cover art. Same can't be said for your choices..

Exdeath was born from a bunch of big bad demons that were imprisoned inside that sacred three and was held inside it with the power of the crystals. So basically he's a shit ton of chaotic evil beings that melted together into a single being over a very long time. That's why his final form is literally a pile of demons and monsters.

I chuckled. Well walking around as a fuckhuge tree all of the time is rather difficult so Exdeath turns into gay golbez. His real form is rather ephemereal it seems as it is implied he goes around possessing things like the queen of the fire city and garula before he is freed for good and he is also shown shapeshifting into a splinter in Krile's foot. Once he settles down in the Rift for good he grows back into a tree to control its power.
