Not specifically during summer, but I like to play through Link to the Past about once a year.

Its not retro but Mario Sunshine.

I used to like to play a Zelda game every Christmas break, but I recently realized I hate the series. I'll probably play them all the ones I own (Zelda1,2, Links Awakening (best), A link to the past, OoT, MM, Windwaker, Twilight Princess, and then finally beat Skyward Sword) one more time before putting the series down for good.

Resident Evil has always felt like a winter game for me. I don't rightly understand it myself. I think it's because I first played it in winter and in spite of the summer setting, I always associate it with winter.

I associate Zelda games with Spring because my birthday is in April and I somehow always wound up getting the LOZ games for my birthday.

I associate Super Metroid and StarFox 64 with summer.

And I associate Metal Gear Solid and Castlevania with Fall.

I Replay this awesome game along with Illusion of Gaia and Terranigma. Oh Contra Hard Corps and Contra 3 are my go to summer games.
