The best wreslting game series is probably Fire Pro Wrestling. Those games are mandrama encyclopeadias... I'm not shitting you, gameplay wise and because of the amount of wrestlers.
Start with Fire Pro Wrestling D for the Dreamcast. But it's in JAP though... there is a translated version going around there somewhere... Check out that series on gamefaqs or something, many games for many consoles, retro and not.

Fire Pro Wrestling Returns
WWF No Mercy
Virtual Pro Wrestling
King of Colosseum II

Those are pretty much the elite 4 in terms of replayability and overall quality. I'd throw WWF WrestleFest in there as the top 5 for sheer fun factor alone.

Also check out these:

WWF WrestleMania 2000 (N64 version ONLY!)
WCW vs. nWo World Tour
WCW / nWo Revenge
Virtual Pro Wrestling
King of Colosseum
Super Fire Pro Wrestling Special
Super Fire Pro Wrestling Queen's Special
Super Fire Pro Wrestling X Premium
Fire Pro Wrestling S
Fire Pro Wrestling D
Fire Pro Wrestling (GBA)
Final Fire Pro Wrestling (japanese version of Fire Pro Wrestling 2 on GBA, features TONS of content cut from the American release)
Gekkitou Burning Pro Wrestling
Jikkyou Power Pro Wrestling '96 Max Voltage
Big Bang Pro Wrestling
Saturday Night Slam Masters
Zen Nippon Pro Wrestling Fight da Pon!

There's some other shit for PS2 that I'm forgetting the names of, but those should give you most, though certainly not all, of the top tier wrestling games.

My favorite game is WWF Smackdown!: Know your Role 2

Game plays amazingly and is a time capsule of my favorite era of wrestling I personally got to watch as a kid. When Smackdown just came out and was light years ahead of RAW, man, even back then you saw how out of touch Vince was starting to get.

I enjoyed this one too, it wasn't a sim kinda game like Fire Pro Wrestling, but it was fun as hell. Once you mastered it, i think the best part of it was playing the game making it look like the matches you would see on TV: letting hte AI get some offense and finishers, selling the interferences, etc.

I've seen a translated FPWD that comes with files incorporated inside, you have to activate "internet" on either the emulator or the Dreamcast to "download" the files from the ISO, it translates the names of all the wrestlers, however it doesn't unlock the hidden ones. You have to beat at least one tournament (can't remember the name) to unlock all the wrestlers, the easiest one to beat is the 4 man tag team interpromotion title.

At least its more fun than those ECW games
I was working in a game store when those Acclaim ones where coming out
>Warzone - People kinda liked as it was different, but down down down grapple should not be for a pile driver.
>Attitude - (RIP Owen Hart, it got delayed due to that), was better than WZ, but people soon got rid of it
>ECW HR - This stuck around, people liked ECW, but as soon as they found out it was just Attitude reskined they lost interest, plus WWF WM2k was out.
>ECW AZ - Nobody gave a shit about it, it was a sinker from day one and before long we where selling it for under a tenner, didnt help that it came out in the same year as the last one, even the wrestling fans that got every wrestling game didnt want it.

I wasn't around for the Legends of wrestling games as I walked out on the job due to "Differences with the boss"

Well..............
He had his own customers that never bought anything, I had mine that spent some serious cash, I took a week off, came back and he basically told them all to go to the other store and was rude to them (really most asked who "That other guy" was), then he stopped giving the store I managed the new titles, sometimes it was a fortnight before we got them, I lost a lot of custom due to that.
He also didnt get any Xbox stuff in and ignored the staffs advice on what to get in and instead getting stuff that we couldn't sell or display (softcore porn DVDs), I think LOW was out, but nobody cared
Then the store got robbed a few times, his response was "Why didn't you call the police? If this happens again I wont be able to pay you" We had a panic button that worked when it wanted to. I also lost a customer due to that as well as one guy (That me and the other bloke called "Taz" as he looked like him) was buying a game at the time and the boss wouldn't allow me to refund him the tenner he spent or osrt him with a replacement game
I got a job stacking shelf's and didn't show up again, didn't even hand in my notice.
Just got a call off the boss on my mobile phone round closing time that I ignored

Annnnnnnyway
I do remember one quiet Sunday showing some kids how to really play WCW/NWO revenge, they knew the basics, but not how to do diving moves, counters, the doomsday device, I still kept beating them.

I only played the first WCW vs NWO. It was pretty fun, in a butten masher kind of way. The whole game felt like it was a bar room brawl.

Speaking of which, do we have any games that feature a good, old fashioned drunken brawl in a pub/inn/tavern? Not 1vs1 or 2vs2 but an entire inn full of drunkards hitting each other with chairs and bottles flying around and shit.

In the horrible WCW Backstage Assault you can fight in several backstage areas. You can even set 2X4s on fire and hit people with them. Wanna jump off a soda machine onto your opponent? You can do that as well. It's the closest you get to what you described.

The game is shit.

I'm a big fan of about half of the smackdown series.

Smackdown! 2: Know Your Role
Smackdown! 3: Just Bring It
Smackdown! 4: Shut Your Mouth
Smackdown! 5: Here Comes the Pain

Then it became Smackdown! vs RAW, I actually like the first SVR a bunch, but they seemed to get less and less good after that. WWE '14 and '15 are better now days, atleast.
