Rewinds are just a series of save states.

The NES has a tiny RAM, so it is not much hassle to keep a lot of these tiny RAM snapshots, therefore practically every NES emulator has this feature.

OP, calm down.

Do you know those games that have a replay after a fight, like Tekken? The same concept applies. You store a few seconds in RAM, and you can come back a few instructions. You can do pretty rad stuff if you know your code (which very few programmers really did, back in the day), like making a Portal clone in SNES, or a Prince of Persia Sands of Time clone on the Mega Drive.
