The PVM L series says it supports 720p at 60hz.
But the 20" bvm's don't cant support that as its beyond the resolution of the aperture grille.

Would this make these sets better for 16:9 viewing?

You need to convert your anime to like 288p lossless h.264 24000/1001fps then run the PVM at like 47.999999 Hz so there are no frames doubled

Ooh, I've been watching a lot of older anime on my Trinitron lately. Hooked up my old laptop with the S-video out and it looks really good, despite the fact that it's being scaled by different factors at once. I've found KMPlayer (the old one, not the new malware-ridden version) is best for CRTs, since you can account for overscan by zooming out (if desired), plus advanced subtitle control, including position.

I'm too much of a pussy to fix the convergence on my TV, are there still TV repairmen who do this sort of thing? And even if there are, will they think I'm crazy for caring? And would it even be worth the money on a standard early 2000s Trinitron?

Could be CRT cataracts, basically some stuff (like glue, for holding a another glass plate) rots around the CRT first and maybe it gets to the center.
This issue is more common on very ancient CRTs.

I can't find a fatbox anywhere. I was thinking of picking up one for retroarch and because 360 backwards compatibility is shit but for now I just stick to my wii for emulation needs.

Well, it's good for multiplats, shumps, XBLA games and some emulators too, maybe media playback. I like my 360 but if you want modern games it might be better to get a PS3. Mod them either way, 360 has a really really decent custom firmware.
