Ok, so what party would you recommend for FF I?

I don't want to break the game by having it too easy but spending an eternity grinding is even less preferable.

Variety is also crucial, having a party of one job type only is definitely not the way I want to do this, let's say a minimum of three different types is a requirement.

That will have substantial grinding for money.

Red Mages are the best class.
Fighter is great but you only want 1 because you'll find one set of good equipment most of the time.
Thief is good for escaping battles, which is the best strategy but not something people probably do the entire game.
Black belt gets incredibly powerful as the game goes on and basically costs no gold. You don't want a weapon equipped after the first few levels.
White mage is healer and can kill large groups of undead with Harm spells.
Black mage can kill groups the easiest.

I like Fighter, Black belt, Red mage, Other mage.

2 Fighters, White Mage and a Black Mage is a good all around party to use but if you are hellbent on "more variety" substitute one of the Fighters with either a Black Belt or a Red Mage. Honestly you are fine as long as you have at least one Fighter in your party and don't use the Thief class. Just keep the Fighter in first party slot and always make sure he has the best possible armor equipped as he takes most of the hits. Also if you end up using the Thief class make sure he is at the second slot so his higher change to escape from battle actually works.

WARNING! UNPOPULAR OPINION COMING THROUGH!
The player should be penalized for poor strategy and the "ineffective" thing should have stayed in the newer games along with the spell charges. Both gave FF1 a small tactical aspect that is missing from the newer games in the series (and most of the remakes of FF1) but now you can just choose attack without paying any attention to who you are targeting and just spam the most powerful magic available to you until you win. As unbalanced as FF1 was it had a good balance going by restricting you using the most powerful spells over and over again.

The difficulty is way too "swingy" (goes from yawn-inducingly easy to plain bullshit and then back again, all throughout the game); the job system is bad both in implementation and in concept - all your characters are basically interchangeable and you are heavily encouraged if not outright forced to switch for gimmicky reasons; running from battles is a non-option past a certain point due to it zeroing your defense, it's less dangerous to stand and fight than it is to run; last boss is a joke

It's just not very fun and the few things it does really well (such as the long, taxing dungeons) are eclipsed by all the things it does poorly. For all its bugs FFI is a more enjoyable experience. Hell, I even had more fun with II.
