It's actually less limited if it's all monochrome. If your console had limited color abilities like the NES, it'd be trickier. Game Boy games rely on the player's imagination, and common sense.

I think it looks especially nice if played on the old gameboy, with that greenish look on it, better than plain black and white.
I think the DX version looks pretty good too, but for example in this screenshot, it just looks a bit clustered, the colors don't mash well together, I also didn't imagine the water to be that color as a kid, I had the greenish color palette in my mind, which made everything be a lot more, yes, dream-like.

I mean, it's probably 90% nostalgia, but there's some truth behind it too... the game was designed to look good on monochorme display, and I think it more than succeeded.

I originally played Metroid II on the Super Gameboy, using the default palette of the game (I think the SGB has a special custom palette for Metroid II), but the other day due to GB's 25th, I decided to bust out my old one and played Metroid II a bit to see how it actually looked on the original display. It actually looks pretty nice too, I actually got super immersed on it using headphones, the sound is also great.

Not through emulation, no. The screens are pretty intimately tied to the logic for the entire game.

That said, games like Metroid II and Link's Awakening are pretty simple and well understood, and all the game art has already been ripped. It wouldn't be too massive of an undertaking to recreate said games in an engine like Unity or something. But seeing as how it hasn't been done before, it seems like there isn't much interest in such a thing, and seeing as how you really couldn't sell the product there's no monetary incentive either.

I do recall reading something about a guy trying to make a 3D version of Link's Awakening a while back, but getting a cease and desist order.
