I'm interested in the disc add-ons to consoles that seemed to be all the rage in the 1990s. So far, I've found...

>Sega CD/Mega CD
>SNES CD (later became PlayStation)
>Atari Jaguar CD
>Nintendo 64DD

Were there any others?

It seems to depend on who you ask. Some say disks are magnetic and discs optical but others disagree and say they're interchangeable.
I'm not sure how the magneto-optical stuff in the 64DD fits in.

The Chinese made a bunch of disk/disc add ons around that time. They didn't really enhance the capabilities of the consoles aside from allowing you to play copies of games though.

PC Engine was not powerful enough for "real" FMV. Instead it did cinematics using pixel art. Huge animated sprites, like the cinematics from 1990s DOS games. Which honestly is preferable to FMV by a long shot.

Japanese made great use of shifting static images and even uncolored drawings even when they had access to the full motion possibilities provided by film/tape/whatever. When consoles reached a point this could be done reasonably well amazing shit happened.

What about hard disks? Even 3.5" disks aren't very floppy.
The Saturn and Playstation had floppy drives attachments as an option for saving games.

You might have better luck going the JP route and getting a MegaCD. It isn't always true, but Japanese people seem to take somewhat better care of their stuff, or at the very least don't act like they are selling garbage they found in the back of a pawn shop earlier in the day.

they're expensive on ebay because of shipping, they charge a lot so they can make the shipping look cheap.
Look for one locally, they dont even run for half the ebay cost. Personally I paid $25 dollars for my model 2.

Yes. If you happen to have an NTSC turbo duo (theyre expensive as fuck), the CD doesnt have a region lock. Theres a physical lock out on the hu-card however.

Actually, the PC Engine was able to do real FMV even better than the Sega CD, they even had a special video compression called HuVideo that was used in like 3 games. And there were also those Sherlock Holmes games that were released on the west.
