Haven't played the HD but I think I heard the music is different and the character models were changed, you could probably mod it but if you have a PS1 or 2 might as well get the original game, it's not expensive these days and it's worth owning.

Final Fantasy VII is the best, and IMO "definitive" Final Fantasy.

In before the hipster brigade marches in to tell me how epic and not-emo Terra Branmuffin's character arc is.

This has been my answer for people like you for almost an decade:

Start out with the SNES version of FFIV and play FFVI and FFV next in that order.
Now if you liked FFIV the most play FFIX next.
Now if you liked FFVI the most play FFVII next.
Now if you liked FFV the most play FFVIII next.
Still want more? Play through the other two games mentioned and FFX. You have now seen where the series' reputation came from and what was so good about it.

I like FFVII, but I always thought the spin-offs were bad ideas because FFVII's story was self-contained. It was over. There was no need for supplemental material. (at least not stuff following the same cast)
