I just beat the Saturn version of RE1 and I have to admit, after beating Director's Cut, RE2 and RE3, the lack of autoaim actually makes a difference
I don't know if Hunters are weaker in Director's Cut or if it's just the lack of auto-aim, but they actually weren't that easy to take care of.

The original PSX release has two main versions: the Japanese and English versions. The Japanese version is an overall easier game and imo too easy. The english version is more difficult and is what commonly referred to as the "longbox" version.

The director's cut has two versions: the regular one and the dualshock version. Both introduce a new harder difficulty called advanced mode also known as arranged mode in the dualshock version. The regular DC version has the Japanese difficulty in standard mode, while the dualshock version has the American difficulty in standard mode. The dualshock version has a different soundtrack.

The Saturn version is mostly the same as the original PSX release but with some visual differences, the US version has the same difficulty as the American PSX release. The Saturn version includes a new game mode called Battle Game, its a fun arcadey shoot em up mode.

I did something similar a few years ago playing the game through for the first time.
I played as Jill on PS1 long box, then went to Chris on Saturn. Not having auto aim definitely makes the Hunters difficult, and you have to take care in general to have some extra time to aim in fights.
You can't use the "aim to see if a zombie is dead or not" trick either.

I thought DualShock Director's Cut had the Japanese difficulty for Original mode but with two ink ribbons. Someone load it up and shoot some hunters with the magnum. If they consistently die in one hit it's the Japanese difficulty.
Need to make my own shitty copypasta for this. This is my recommended playing order which skips easy difficulties and focuses on console versions for English speakers primarily. Always Jill first, then Chris:

US DC Arrange
US DC DS Original (Assuming difficulty noted as above otherwise skip it if you really hate clown farts that much compared to the rest of the OST)

I thought the Saturn version was harder than the Director's Cut. It took me several attempts to get through the hunter hallways on the revisit. Never did beat the original PSX version, only played it once in 1998. I got the DC shortly after.

Yeah, in the international versions you have to choose the Type C controls which are identical to Type A except it has autoaim
In the JP version, autoaim is not only on by default but you actually have to use a cheat code to disable it

Interesting, I played it on Dreamcast first and that was one of my first RE experiences. It took me some getting used to not having auto-aim when going to RE1 Longbox and Saturn.

I get that autoaim was initially something they just hacked in at the last minute for the first game but it would have been nice if they refined it a little for the sequels. imo it should have been more of an assist to nudge you on target as long as the enemy was within a fairly generous cone in front of the character. No reason to make it super picky in games like these. But instantly snapping 180° and locking onto an enemy behind you or aiming with laser precision at an enemy on the other side of a huge room like the dining room balcony is really dumb. Zombies playing dead also should have been excluded from critters it would lock on to.

OP here, I should have checked TCRF earlier:

The auto-aim and ink ribbons are obvious but this confirms the enemies also being more difficult. It explains why it takes so many shotgun shells to kill a hunter in the US longbox and US Saturn versions

Classic Rebirth as always but the music quality is ass unless you also install a high quality music mod
Also keep in mind that it's the easiest version of the game (you don't even need ink ribbons to save as Jill)
I personally prefer the Classic Rebirth versions of RE2 and RE3 but I'd say you should emulate the NON-dualshock, Director's Cut PS1 version for RE1

Perfectly acceptable, and the best "retail" experience available. Just watch the uncensored Kenneth and intro videos on YT and you have the full RE1 experience. True Director's Cut mod is also an option if you need to have it all in one package but either way you're getting slightly censored in-game gore compared to PC.

Mikami gave the rental explanation in a making-of book, but in an interview he gives another explanation and explains that unlike the Japanese market, in the west players seeked and revered difficulty. This is easily backed up by looking at magazines. "Rentals" are a factor but pleasing the player will always be the prime factor.
These days people only remember the "rental" explanation because the concept of enjoying difficulty has become completely alien.

Yeah it's a shame they didn't get transparencies to work properly, but it's kind of neat they changed some backgrounds to accommodate. The vats in the final boss room are all broken in the Saturn version, which is kind of cool as it implies the monsters escaped. (I still prefer the look of the PS1 game though).
