You can either play it through MGS3 Subsistence (it's on Disc 2 iirc) or on an MSX emulator. WiiVC if you have a Wii. Or I dunno, if you don't have a problem with this you can just buy/pirate the newest collection, all retro mainline MG/MGS games are on it

ill vouch for the MSX games tho
if youre playing MGS3, you unlock them after beating it iirc

I agree with you though, MGS1 is the best starting point, with “mostly in order of release as best you can afford” after that. Definitely play the titles with “solid” in the name in order of release.
If you like the games, consider MG1 and MG2 (they’re available as bonus content on MGS3: Subsistance version, which is also the version in all of the compilation re-releases), but if you aren’t used to the quirks of Commodore 64-era games then it’s okay to look up a guide for those. Strongly recommend Peace Walker even just as a standalone experience, but if you want the full impact then make sure you play MGS3 and MG1&MG2 at some point beforehand, then Portable Ops, THEN Peace Walker (grind for the secret audiologs), then GZ and MGSV

The series is over the top and wacky, campy, and soft-sciencey as hell, which is part of what some of us like about it, but it strikes that balance of “hey what if this character was a vampire just for the fuck of it” and “hehe, that guy peed his pants” goofy humor with characters experiencing and expressing real loss and grief. There isn’t really a moment where the games just tell you “you should be sad right now,” there’s plenty of time spent on character development for you to legit become attached to a character because you also thought their opinions on politicized nukes or immigration policy or whatever was interesting, or because you laughed when they tried to act all cool and you packed their shit in and they still tried to play it off.
It takes itself seriously enough for some things that it doesn’t feel the need to take itself 100% seriously for all things.

You can start with mgs1 or mgs3 because both work pretty much as stand-alone titles but don't start with mgs2 or mgs4 because they heavily require you to have meta knowledge of the series. Can't say about the newer ones, haven't played or watched them.

As a kid I would watch my brother play Metal Gear on our NES. I gave Metal Gear Solid a shot since the reviews at the time were hailing it as the greatest game on the Playstation. Tried it. Loved it. Been a fan ever since. The Twin Snakes was a decent remake. Minus the shitty Gamecube controller.

Just play them in release order. If you want to skip the first two games and start with Metal Gear Solid you can do it. I think most people would agree on playing: MGS > MGS2 > MGS3, ignoring the minor titles and Twin Snakes.
If you still want more after playing those, I guess trying the original Metal Gear and MGS Portable Ops could be worth it.
