Is Sanae supposed to have spent 15+ years in Gensoukyou at this point? I've always thought that in-universe time skips between the games are much shorter than ZUN's release schedule, given that none of the human characters seem to age a lot. That'd mean that there's a major incident every 1-2 months or so though.

Time is enough.
The Real Problem is that people feel old. They want a fountain of youth where they can relive console wars of old and talk about the same games they did as a child. And that aging young people seek such a fountain of youth as well reminded them of their own age and mortality.

7th gen is literally modern games. The current Elder Scrolls game is a 7th gen game. GTA 5 is a 7th gen game.

Both of these cases are quite late generation (2011, 2013). One of them is one of the most extensively modded games ever, and it has been remastered.
