Try Pitfall 2 or HERO and take the time to RTFM first. They're great games although there are later ports with updated graphics you might find "better" although the original Atari versions have near infinite depth.

Example: VCS Pitfall 2 has New Game+ 255 times IIRC, the Sega arcade version with the much better graphics has two or three.

Yeah Jungle Hunt, Crystal Castles, Congo Bongo etc... There are tons of arcade ports that keep the gameplay intact there's just a big hit to the graphics so kids that have MAME are like "WTF is this crap?" when they see the VCS port even though, in reality, they're good ports.

If you don't like Atari games, read up a little on the platform itself. Imagine yourself burdened with the world's only 1-d graphics chip. You've got 4 kilobytes total for your sprites and code. These are desperate, back-up-against-the-wall games. Everywhere boxed in by time and space. What makes a good Atari game fun is playing along in that little box.

I tried to write a 2600 emulator too, but for me the problem was figuring out how to use OpenGL to generate 2D graphics. The 2600 encouraged pixel-by-pixel rendering of the screen, and I could never get it to work right, so I eventually gave up. This is supposed to be Pacman, but it's only rendering the background. At least the 6502 emulation works well.

I think if you want to develop a taste for older systems, you should take it in steps and work backward. For example, say you already like NES games. You could work back by getting yourself used to the earlier games with simpler graphics on that system like Super Mario Brothers, Metroid, or Zelda, and then start mixing in the more sophisticated games on an earlier system like Atari such as Jungle Hunt, River Raid, stuff like that.

Basically, just take games you already like playing and try to find games from just a bit earlier, or that are kind of like them in some way. Work your way back by degrees.
