I'd recommend not skipping III. Some stuff, most notably the controls, wasn't as polished as in the later games. If you play the games in order it won't be a problem, but if you play SA, you like it, and you want to play III later, you may find it too much of a downgrade to be enjoyable.
If you enjoy the main 3d universe games, don't forget to play Liberty City Stories and Vice City Stories too.

I and II are a lot of fun, actually. Best driving 'feel' in any top down driving game imho. 3D and HD universe GTA are much less playful, also. GTA2 - Just play the first island, the game is WAY too hard, but fits as a followup due to the futuristic setting
GTA3 - Same protag as GTA2, so makes sense
GTA Liberty City Stories - You need to play this on PSP, so if that's too hard idk
GTA SA - Nice little pallette cleanser from playing as white dudes all the time, get a lot of cool new areas even if you have to play as a negro.
GTAVC - Like a nice hot bath after SA. You'll need to cheat to finish SA, and VC is a bit easier and will get you ready for GTA6

GTA3 is the most important entry to be played out of the franchise (I haven't played 5 or the offshoot games). The earlier ones are largely supplanted by 3, and the later games mostly take two steps forward and two steps back on every front. But the world in 3 is large enough to fill rich, and the pacing is fast, so you can blow through it while experiencing virtually all of the content in a single pass. Consider the radio stations, which you'll hear all of by the end of the game just going about your business, compared to GTA4, where you'd need to sink a ton of extra time into the game just to sit around and listen to it all. And then watch all the crap on TV, read the websites, etc., all as dedicated tasks if you want to feel like you accessed most of the content.
If you really enjoy GTA3, great, move on to Vice City. But if you felt like you came out satisfied for the time being with the GTA experience, you won't actually be missing out on anything significant from the later (or earlier) entries. They can safely go on the back burner. I'm saying this as someone who has been replaying the series the past few months.

If you're a fan of III then you should 1000000000% play LCS. It honestly just feels like a straight continuation of everything you love about III. I was never a big fan of VC (and VCS by extension) but LCS is one I come back and replay quite often. Partly due to nostalgia, partly due to how much I love everything about III.

Yeah I think you'll really enjoy it if you gravitate towards III. It has a lot of missions, environment feels good, the story is actually better than III (still simple) and just overall has a simple feeling to it. Which is why I like it so much, since there's no major fancy bells n whistles. Feels like III DLC desu.

I'm playing them right now, starting with San Andreas. Almost done, in Venturas with James Woods doing schizo shit. After this I'll move onto Liberty City Stories and then III. Will probably play IV and V too and then finish off with an 80s double feature, VCS & VC. I haven't played GTA 3 but remember it having a soft green Matrixesque tint most of the time, and something about the audio in that game is unsettling.
