Yeah I hate Journey to Jaburo too. Apparently it has a lot of people defending it but I think it's balls. There's a lot of nice ones though, The One Year War and Encounters in Space are great, not too deep or anything, they're just nice story driven action games with cool setpieces. If you want more balanced deeper gameplay, you have VS series, especially Federation vs. Zeon, it's a simple game but there is depth to it and the gameplay is TIGHT if you know what I mean. And if you want Gundam SWAT you can play Zeonic Front.

I think the Mobile Suit Gundam Blue Destiny trilogy deserves a mention. Like Gungriffon it's hard to get into nowadays because the games were made before analog sticks were the baseline. Cool games nonetheless.

I kind of prefer the first two games because Gundam Vs Zeta Gundam is more about recreating epic anime moments whereas the first two games make you a grunt in the timeline of Gundam/Gundam Z and you're basically just trying to make it out alive from mission to mission. Example: I know a mid 40s woman who works at a gym as a trainer. She was modestly fit but always friendly and peppy. Front Mission Alternative is janky but had a neat concept. You don't really control the mechas but you give your squads orders on waypoints on the map and then they act them out. The pilots develop new abilities based on their stat gains and you decide the ratio at which each stat levels for each pilot. I feel like there's a good game in there but it needed more iteration. Controller probably limited the design, I think it might've made more sense as a PC game.

I had the second game in the late 90s. This and other games like Metal Slug & CSoTN were (and still are) amazing! These sorts of games are why I still love the Saturn. Honorable mention goes to Genesis and Sega CD for also having wonderful games and I STILL PLAY THESE SYSTEMS TODAY CUZ THEY’RE STILL FUN.

Amok is like a 'Strike' game, but with a mech. It actually uses a pretty neat looking voxel engine, which is different for a Saturn game, and it also seems to be using 2D scaling sprites mostly for the main player and enemies. Kinda like Bulk Slash in that respect. Also, obvious Jesper Kyd soundtrack. The entire soundtrack sounds like a 32bit remixes of Red Zone's music.
