I find that the hardest levels are the ones that require QTEs or aiming, especially the Zeruel battle and the Lance of Longinus mission. And I'm playing on real hardware, I imagine on emulator it's a nightmare to aim that, I know a lot of people who emulate get filtered there.
For the 1 on 1 battle missions, it's all about breaking the angel's AT Field first (button mashing, it's not real so much mindless mashing as it is more of getting the timing down and not fucking up the sequence of pressing one button after the other consecutively and as fast as you can), when the angel's AT Field is broken, you want to grab them and throw them afar, although you can also make some chip damage by hitting them with the knife, but the fast way is to throw them away, then when the camera centers on the Eva (and you see the "ANGEL >>>" message on the screen), you have to run towards it (not walk) and at an exact time where there's a sound cue, perform a command (there's several, up+A, down+A, etc), the Eva then will perform a special attack on the angel. There's several special attacks that you can do per mission, and you later can see them on the theatre mode, so you sort of go unlocking them. The catch is that the kind of special attack you can do also depends on your sync ratio, which goes up by doing chip damage (so yeah you still want to do some chip damage before launching the enemy). And of course don't get hit because that makes your sync ratio to go down.
