To cast spells, use the rune chart that's located above where you're using the weapons. There are four "rows" of runes (therefore allowing for spells that are 4 runes long max), after you select one from a row it will detract an amount of mana from the character and move on to the next "row". The trick is finding the right combinations; get a rune chart (so you know how they're called helps a lot) and try experimenting, some of the spell combinations you find described on scrolls in the dungeon in case you won't figure them out first. There are no single-rune spells, as the first row merely describes what power will be the spell you cast - the leftmost rune is the easiest and weakest here.

Most (not all) priest spells require him to hold an empty flask in one hand. So he can create stamina potions, healing potions, etc. There's no direct "heal" spell in the game.
