I've recently bought a couple of the older Star Wars games from GOG and was wondering what's the go-to for playing these things on modern systems nowadays?

Shadows of the Empire controls like wet ass and the controller controls require mashing on top of some of the worst tank controls I've ever seen but it's still at least somewhat playable. Is there any way to get this playing better because I remember N64 controlling far better than this.
Jedi Knight is mainly what I'm asking about here. The GOG release seems to not have audio when firing anything but does have background audio. Using the various unofficial patches doesn't seem to fix any issues at all even with JKVersions grabbing the 1.0 .exe and it feels like sensitivity is awful. Is there any way to go about installing this properly?
