You can also tell Foobar to use specific soundfonts/instrument sets in the options.

I really wish that it let you swap them around more conveniently with like a dropdown menu in the front interface though, because when listening to lots of different .midis, some sound good in some soundfonts, while others sound off for even really bad (because they were composed around a specific one). Sometimes it's also cool to hear how one track sounds in different ones.
