You just need some creativity and artistic license to make it work like other FPSes - no one said the whole game has to take place in a town with small buildings. You could make up level themes and then make 1-2 levels for each one - a classic wild west town with a saloon/prison/bank to start the game, a trip to the mountains similar to the canyon level in douk3d(it is an open environment, but not that bad), a gold mine which would allow for a lot of closed caves and tunnels, a long ass train like in Blood, anything else you'd come up with, and then at the end of the game you'd come back to the town.

Same thing, you need to not take the setting too seriously and then you can make a lot more shit up:
>A knife, lasso maybe?
>classic revolver, you can akimbo it later
>a bow and arrow looted from the indians
>rifle for shotgun replacement, some historically inaccurate portable gatling gun as a chaingun replacement
>classic cannon? as a rocket launcher
>fire water for molotov or dynamite from blood as a tossable explosive
>optionally some goofy ass high scifi plasma weapon(put it in some sort of John Carter/Cowboys & aliens secret encounter)
>there's room for a lot more things, just use your imagination
Basically if you want to make it fun you have to forgo historical accuracy - you can add some arcanum style more advanced machinery even - just don't overdo it with steampunk because a lot of that genre is utter sovlless faggotry in style of "machine from modern times, but it's brass/wooden and has a cog randomly placed somewhere"
