Try PrBoom+. You get bonuses like uncapped FPS, higher resolutions than emulated 320x200 and higher Wad compatibility, but you still get the feel of old Doom.

Capped FPS is nice sometimes though. IMO it makes the game feel faster, albeit jittery.

I usually play Mega Man using no weapons in the stages and then whatever I feel comfortable using during the actual bosses.
No More Heroes kind of reminded me of that in a way. It's weird having people ask how I can do X thing without Y weapon.
