Avoid the Taito remakes (unless you want to play a modern Wanderers from Ys, not Oath in Felghana).

Ys Origin (Steam)
Ys I & II Chronicles+ (Steam/PSP, Steam is slighty better)
Ys: The Oath in Felghana (Steam/PSP).
Ys: Memories of Celceta (Vita)
Ys V: Kefin, Lost Kingdom of Sand (SFC, the only old Ys game not remade into its "definitive version" yet)
Ys: The Ark of Napishtim (PC/PS2, avoid PSP)
Ys Seven (PSP)

The order above is the story order, if you care about that sort of thing. >>1794639 is right when he says

however all of them are tied by a larger arc, the foundations of which you will soon encounter in Ys II. So all games have a self-contained story that contributes to the bigger mythology.

The only ones with continuous stories are Ys I, II and Origin, so if you're at all interested in the Ys lore I'd advise you to play Origin next. Playing it after finishing the first two games will get you more interested in the story, and will help you recognize all the references much more easier. It also explains pretty much everything that Ys I & II didn't, and from a gameplay perspective it's a good way to get accustomed to the style of the new Ys games.

Most retro Ys games are very different than their remakes. I & II are the only remakes that refined the original gameplay but didn't change it. Every other remake takes the story and locations of the original and vastly alters the gameplay. The retro Ys games that have been "replaced", with their best console, are, in order of both release and story:
Ys I & II (PC Engine)
Ys III: Wanderers from Ys (PC Engine)
Ys IV: Mask of the Sun (SFC, the "canon" Ys IV)
Ys IV: Dawn of Ys (PC Engine, same premise but different story than Mask of the Sun, better gameplay, non-canon)
Ys V: Kefin, Lost Kingdom of Sand (SFC)
