It's not a cop-out, it's just doesn't go into detail. The guy who created Earthworm Jim explained this when he saw the HD remake of the first game. He said you can't just put animations together without careful consideration on how they flow. In other words, in a single animation there are different rates of acceleration, kinda like how a bouncing ball has curved acceleration instead of the speed being constant. That's the issue AI interpolation will never understand because it's job is to fill the gap, not to make the motion aesthetically pleasing to the human eye.
