I'm slightly too young to have been paying attention to the SNES launch. However, Super Star Wars caught my eye at a store and absolutely blew me away. Was the game that made me beg for an SNES. 1993, so not a launch title at all, but it is pre-DKC (DKC series was actually carrying the SNES against the Playstation).
I'm honestly impressed every time I replay the series, as the developer, as far as I know, is a no name. The gameplay is fine. The graphics are some of the best on of the 16bit era, uses mode 7 properly, the complete package. And it is from a Western dev, no less.

To this day, I don't believe there is any pattern or trick to beating the Cantina boss. You just have to jump wildly and hope you dodge enough attacks that he dies first. Shovelware platformer design at its finest.

Taking an average of how awesome it was when it was brand new and how much I enjoy it now; I'm going to go with Super Star Wars. Nonstop action, great graphics, great renditions of the Star Wars music, just the right length. I hadn't played it for a while when I popped it in recently, and guess what, just as awesome as ever.

Super Star Wars, I always wanted to buy it when I was a kid, but never managed to.

Not the best ever, but definitely one of the better games as far as movie adaptatiosn go.

Back before about ~2000, Star Wars on the title of a game generally meant you were in for an awesome experience. This is no exception.

My second favorite Star Wars series (Dark Forces 1 and Jedi Knight 2 also kicked all sorts of ass) after pic related series.

Really ugly graphics, but awesome level design is what I remember from back in the day. I haven't played it in ages, but I remember that the levels gave you a sense of scale that other games of the time like Quake never did. They felt HUGE, not just in the sense of being large, all FPS games had large mazes then. They were large in terms of actually feeling like huge space stations, or huge temples, or huge space ships. Everything made you feel tiny.

I also remember playing this on the MSN gaming zone with a 28k dial up modem. Jesus Christ the latency.

Also, Quake 2 engine what? The game is older than Quake 2.

Since we are talking about Lucas games, how about Super Star Wars. I even managed to finish it on Jedi difficulty; it's amazing what you can do when you are a bored boy and all your friends have a PSX or a N64 and you are still stuck with a SNES.
Now I'm thinking about emulating the other two games.
