I've been using this map an anon posted a while ago, you just bucket fill in the lines for doors or switches and the squares for hallways.
For games with huge ass maps like later Wizardry I just make shitty ms paint maps though, you miss some secrets doing it but I can't be asked.

For classic games, I prefer just using a simple paint spreadsheet like this, then filling in the squares and borders with the paint bucket tool as I get to them. Very quick and easy to work with.
