Yeah, the correct term to use here is "cool"
It's cool when devs just put weird one off things in games, people took the time to conceptualize, draw out, sprite, animate, and code an enemy used for a single area, maybe even in an optional or hidden place. Knowing that not everyone will see it. That takes guts.

It's cool, and shit like that always puts a smile on my face.

There's some fun cheats to fiddle with (hookshot any surface, every wall is climbable), a built in randomizer, fully customizable controls/HUD, the ability to use the Dpad for items/boots/tunics, and my favorite thing is using the high quality models for dropped items.
Like you know the fancier looking rupees you get out of chests? You can have those spawn in the world.

You can also adjust the speed of climbing ladders/vines, and the speed of block pushing.

The real good shit I've seen in Ship of Harkinian:
>Option to hold B and skip dialogue
>Option to Speed up block pushing
>Option to Speed up vine climbing
>Option to Skip treasure chest animation (Link just kicks all chests open)
>Visual stone of Agony
>Mute Navi
>Mute low heart warning
>Option to be able to put away shit with the A button immediately rather than having to stand there for like 2 seconds
>Restore red Ganon blood

Then there's some other cool optional shit they added like blue fire arrows that can melt red ice, and light arrows activating sun switches.
There's some fun cheats that I wanna fuck around with later too, like making the Hookshot latch onto anything.

Respectable taste, and good reasoning behind each. LoZ1 is pretty high up there for me as well, I actually find the original Zelda's combat to be fucking fantastic, and I've spent many, MANY hours playing a lot of custom quests with Zelda Classic.
Link's Awakening is another personal favorite of mine, partially from a lot of childhood memories with it being my first game with my gameboy I got for my birthday at the age of like, 5 or 6. But I also love the game for how snappy it is and the weird, dreamlike and sometimes sad setting and tone.

I just like Zelda.

Save Mike's Fun House after you get more experience with Zelda Classic quests because it's fucking hard and dickish, but genuinely one of the best.

I enjoyed shooting those stupid clams in the mouth with the Hookshot, and listening to those spikeball enemies roll around is really satisfying. Great music and atmosphere in this dungeon.

That'd make sense. Probably the shift of Saria being the sage came into play to give Link a friendship which would play into the early story since Mido (if we're going off of the final game's stuff) would be more of just an asshole to Link and not making sense as a sage. Or perhaps Link was meant to be good friends with him and he was a chill dude, but someone shifted him into being Saria since the dynamic between Link and Saria being childhood friends and possible boy/girlfriend material being more dynamic.
