Holy fuck i miss that

Easily Donkey Kong Country 2 for me. The atmosphere and music were great along with how you can run faster as Diddy, and glide through levels as Dixie. It's also has the best Boss battles and secrets tagged to it. I had the game done at 103% without much problems.

As for DKC3, it's took me a while to actually like the game. I didn't like how they regressed the maturity of the game by tagging a big baby to Dixie and switching the style of the music. While the bosses were mostly shit and the first few levels are boring, it's do pick up some space and eventually have it's own gems for levels. Just a shame it's felt rushed and forced a unwanted style.

DKC1 is clearly my second favorite, but not as good as what DKC2 achieves as it's definitely more refined and detailed.
