It also depends on stuff like mod setups and your own preferences. But the thing about Baldur's Gate is that you aren't really going to run into a class that's completely incapable of handling stuff and even the bottom-tier classes can have some use or niche utility, and there is no real "F-tier" that produces horribly underpowered and unreliable characters like a Final Fantasy V Berserker.

800+ health, resistance gear for every occasion (esp. Fire/Lightning), at least one synergized damage ability, one point in each one-point-wonder that you can utilize for utility or crowd control. If you're physical (you poor soul), you might want to grind longer in Nightmare to have better chance to hit high level minions.

Everything else is variable. Defense isn't good until you hit superhigh levels of it, Max Block.is down to preference and build.
