It's probably because playing game is mostly a low intensity activity and you'd prefer a more intense activity like setting up your emulators and devices. (because setting those things up is much more like system administration)
Would you say you have a low intensity job (or no job)?

I only enjoy playing games if I've burnt out my executive function at my job(software dev) or doing other more demanding hobbies. Playing most games (other than souls-like games) is boring if I'm not in the mood to relax and go into auto-pilot mode.

After a hard day, grinding an old RPG is relaxing, otherwise it's boring and slow.
