S-Video for NTSC | I believe PAL models need a modified cable or something to that extent to get proper S-Video from it; Otherwise you're stuck with composite. Both can modified for RGB, though some easier than others.
>NGC/GCN
Not retro, but S-Video or Component for NTSC(Depending on how much money you want to spend) | RGB for PAL; S-Video was disabled on PAL models, and while the hardware technically supports the component cable, the games won't play in progressive scan without homebrew.

Cheap S-Video cables are often wired with composite video running on both lines, resulting in checkerboarding and a bad quality picture, worst than just normal composite in some cases.
Original Nintendo cables are obviously safe, as are Hori, Monster hilariously enough, and Innovation.
If you can't find these at a decent price, try to at least find a pair that only has the s-video mini-din connector and audio, no composite. While not all composite+s-video cables will have botched s-video, it's much much more likely.
